Cheffy’s Recipes: Top 3 West Country Seafood Dishes – Part 3

It's that time folks...the time I give you my third and final Top West Country Seafood Dish recipe!
If you're enjoying static caravan holidays now, this method gives one final chance to pull out the BBQs before you retire them for the winter.
Barbequed Thai Style Scallop & Cod Skewers (Serves 4)
The quality of scallops from south west is excellent â mild, sweet and satisfyingly firm yet fine. Best part is, they are widely sold by fishmongers all around our caravan parks.
Although scallops and cod can be eaten with just a sprinkle of seasoning, I love to marinade them in a gorgeous Thai style marinade, here's how I do it...
Ingredients:
8 x barbeque skewers
16 x scallops
400g cod fillet (cut into 4cm cubes)
8 x lemon grass stems
1 x large red chilli (seeded and finely chopped)
1 x tbsp olive oil
2 x tsp fish or soy sauce
2 x garlic cloves (crushed)
2 x tsp grated ginger
1 x tsp ground cumin
Method:
First make the marinade â mix together the chilli, olive oil, fish/soy sauce, garlic, ginger, and cumin.
On each skewer, add two scallops and two pieces of cod. Place them in a tray and cover with marinade, leaving them to infuse for around 30 minutes.
Fire up the BBQ and when it's nice and hot, lay the lemon grass stems on the grill. Place the skewers on top of these again and cook for 5-6 mins on each side until opaque.
Serve with a nice seasonal salad, or my personal favourite, spicy couscous salad.
