Easy winter warmer recipes to cook in your accommodation
If you’re staying at Llanrhidian or Ruda this winter season and you fancy whipping up a hearty meal in your self-catering caravan or lodge, we’ve got some yummy ideas to keep everyone fed and happy!
One-pot chunky veg & bean stew (Ve)
This a great option for filling tummies, warming cockles and keeping washing up to a minimum!
Sauté onion + garlic → add chopped carrots, potatoes, celery → pour in a tin of tomatoes + stock → add a tin of beans → simmer until thick → season.
Optional: Add smoked paprika for a “campfire” flavour.
Super simple creamy chicken & mushroom skillet
One pan, maximum flavour!
Cook sliced chicken until brown → add mushrooms + garlic → splash in cream or a cream alternative → simmer → serve with rice, pasta, or crusty bread.
Blissfully easy Bolognese
Let’s be honest, who doesn’t love a good Bolognese? Super simple, super tasty.
Brown mince → add jarred pasta sauce → add grated carrot & herbs → simmer 20 minutes.
Serve with pasta or use leftovers in toasties or jacket potatoes. Don’t forget the cheese. ALL the cheese! Try a veggie or vegan option with Quorn.
Chickpea and spinach coconut curry (Ve)
Fast, flavoursome, vegan and caravan-friendly.
Add onion + garlic to a pan → curry paste → tinned chickpeas → tinned coconut milk → simmer → add spinach. Done!
The humble jacket potato
It’s the perfect solution for an easy meal at the lodge or caravan. Everyone chooses their favourite filling, you get to bung the spuds in the oven for an hour and enjoy some family time, then sit down and tuck in to an easy but filling meal.
Microwave for 8–10 minutes → finish in the oven for an hour. Wrap in tinfoil for the majority of the bake, then unwrap for the last 10 minutes to crisp up! Top with chilli, tuna mayo, or baked beans and cheese.
