Lock Down Cooking Fun

I hope you are staying safe at home. I wanted to share one of my bellissimo recipes for you to make at home. We all know that flour is in short supply at the moment, so I've come up with a simplice recipe you can make without flour.

Crispy Chocolate Fridge Cake

You will need:

  • 300g dark chocolate
  • 100g unsalted butter
  • 140g golden syrup
  • 200g digestive biscuits 
  • 100g sultanas or raisins
  • 50g mini marshmallows
  • 85g rice krispes
  • 100g mini eggs, smarties or other chocolate sweets

Melt the chocolate and golden syrup over a gentle heat. Add the butter and stir until it is smooth. Put your biscuits into a bag and bash with a rolling pin (don't smash into crumbs - you want some chunky bits). Add the biscuits, sultanas/raisins, rice krispies and marshmallows to the chocolate mixture and stir.

Put the mixture into a shallow baking tin lined with greaseproof paper and push down with the back of a spoon. Add your chocolate sweets to the top and push gently into the mixture.If you want you can get really creative and add extra toppings. Put in the fridge for an hour to set. Then cut into 12 chunks. Keeps for up to 5 days in an air tight container.
