Winter Warming Recipes

Ciao Foxy Fans. Today I am going to share with you some of the delicious recipes my mamma taught me. Now that our Cornwall Holiday Parks are closed for another season it is getting colder and these delizioso meals will help you keep warm and toasty.

I like to start my meal with a Minestrone Soup. Very important that you use a good stock then you can add all sorts of belissiomo ingredients like carrots, green beans, haricot beans, celery, onions and tomatoes. Throw it all in a slow cooker and add some small pasta like conchigliette about 20 minutes before it is ready. Don't forget to season with salt and pepper. It tastes fantastico served with a warm ciabatta roll.

For a light lunch why not try some Gnocchi? These little potato dumplings are wonderfully comforting. They are easy to make too, just combine potatoes, egg yolks and flour, roll them out and hey presto they are ready to cook. Boil them lightly and serve with butter and fresh shavings of parmesan. Tres gustoso!

 

For a meraviglioso dinner why not try Chicken Parmigiana. Tender breast of chicken dipped in breadcrumbs and parmesan, fried, smothered in a wonderful tomato sauce and then topped with melted mozzarella - Mamma Mia, my mouth is watering just thinking about it.

What better way to finish off a meal than with chocolate. I love chocolate! You can make little gooey chocolate puddings with good quality dark chocolate, butter, sugar and eggs. Simply melt the chocolate, add melted butter, fold in the eggs and sugar then pop in the oven. Serve with a little biscotti - heaven on a plate!
