World Pasta Day
Ciao Bella Foxy amigos! It has been a long time since I spoke to you, I have been extremely busy at our holiday parks in Cornwall, Devon and Somerset making some fantastic recipes for you all!
Today is World Pasta Day - a big deal to me being Italian! World Pasta Day was established in 1995 where pasta experts from all over the world came together to discuss the glories of pasta. The World Pasta Congress use this day to promote eating pasta but also it's cultural and culinary importance.
In honour of World Pasta Day and Halloween I am going to share with you one of my favourite pasta recipes for this time of year, perfect for you to make when you are on your John Fowler caravan holiday this October half term.
Bacon and pumpkin pasta
Ingredients
3 tbsp olive oil
140g pancetta or bacon cut into cubes
1 small onion thinly sliced
25g butter
500g pumpkin
20g fresh sage
400g pasta
25g parmesan
Method
1. Heat a heavy-based saucepan, add 1 tbsp olive oil and pancetta or bacon, then cook for a few mins. Add remaining oil and the onion. Cook for 5 mins, until the onion softens and the pancetta is crispy.
2. Stir in the butter, then tip in the pumpkin or squash and sage. Mix well to combine, then season. Cover and cook for 6-8 mins, stirring occasionally until the pumpkin is soft, but not falling apart.
3. Meanwhile, cook the pasta according to pack instructions. Drain and add to the pumpkin mixture. Stir in the parmesan and season. Serve in pasta bowls sprinkled with extra parmesan.
This recipe can also be made as a vegetarian dish - just take out the bacon!
